Ingredients
Passion fruit - 100gm
Balsamic - 50ml
Olive oil - 20ml
Sugar - 10gm
Salt - as per taste
Pepper - 1 tsp
Macadamia nuts - 30gm (as a garnish)
Macadamia brittle
Directions:
For Beetroot

Peel the beetroot and wrap it in foil, then bake it in the oven for 45 minutes at 200 degrees. After baking, cut it into thin slices.
For the Dressing:

Take a pan and add balsamic, salt, sugar, and pepper. Reduce the mixture by half

Add olive oil and passion fruit puree to the pan, and mix it all together.
Assembling:

Arrange the sliced beetroot in a circular form on the plate.

Add macadamia nuts to the dressing, and then pour the dressing on top of the beetroot.

Finally, drizzle some macadamia brittle over the dish as a finishing touch
